Preheat the oven to 400°F. Line a sheet pan with parchment paper
Divide the corned beef into 4 equal portions. Place them in piles on the sheet pan and top each with ¼ cup of the sauerkraut and ¼ cup of the cheese. Bake for 10 to 15 minutes, until the meat is heated through and the cheese is melted.
In a small bowl, mix together the dressing ingredients until well combined.
Place each portion of kraut and cheese–topped corned beef in a lettuce leaf and top with a couple of dill pickle chips, if desired. Serve with the dressing.
