How to Make

Step 1

To begin, preheat the oven to 400°F and prepare a sheet pan by lining it with parchment paper.

Ingredients

  • 1 pound deli sliced corned beef
  • 1 cup sauerkraut drained
  • 1 cup shredded swiss cheese

Dressing

  • 1/2 cup mayonnaise
  • 1/3 cup sugar free ketchup
  • 1/4 cup sour cream
  • 2 tablespoons dill pickle relish
  • 1 tablespoon prepared horseradish
  • 1 teaspoon hot sauce
  • 1 teaspoon worcestershire
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

For serving

  • 4 large lettuce leaves
  • 8 dill pickle chips

Instructions

  • Preheat the oven to 400°F. Line a sheet pan with parchment paper
  • Divide the corned beef into 4 equal portions. Place them in piles on the sheet pan and top each with ¼ cup of the sauerkraut and ¼ cup of the cheese. Bake for 10 to 15 minutes, until the meat is heated through and the cheese is melted.
  • In a small bowl, mix together the dressing ingredients until well combined.
  • Place each portion of kraut and cheese–topped corned beef in a lettuce leaf and top with a couple of dill pickle chips, if desired. Serve with the dressing.
