Crock Pot Cheesy Bean Dip

Every game day spread needs a good Bean Dip, and who doesn’t love a dip that practically makes itself? Just dump the ingredients and let your slow cooker do the work. Easy, cheesy and always a crowd pleaser!

What You’ll Love About This Recipe

I’ve made bean dip for over 20 years. Normally I bake it. That works fine but when serving it at a party the cheese tends to harden, making it hard to dip. The slow cooker is the answer! My new bean dip is packed with flavor and the best part? It’s a total dump and go crock-pot recipe. You don’t have to dirty a bunch of bowls or spend time mixing everything together. Just layer it all in the crock pot, put the lid on, and let it cook while you do other things. It’s perfect for game day, parties, or any occasion.

How to Make Cheesy Bean Dip

Layer ingredients in the crock pot in this order:

  • Spread refried beans on the bottom
  • Place cream cheese in chunks on top
  • Add sour cream
  • Sprinkle shredded cheese
  • Add taco seasoning
  • Add green onions 
  • Pour in the entire can of Rotel (don’t drain)

Cover and cook on low for 1–2 hours, until dip is melted

Once it’s heated, stir everything together and serve from the crock pot.

Substitutions and Variations

Cheese – Use your favorite blend. 4-cheese Mexican blend melts beautifully, but cheddar or Monterey Jack also work.

Rotel – Choose mild or spicy depending on your crowd.

Add-ins – Corn, black beans, or jalapeños for extra flavor and texture.

Toppings – Sprinkle extra green onions, diced tomatoes, or sliced olives on top before serving.

Serving Suggestions

Cheesy bean dip goes perfectly with all your favorite dippers. I serve it with tortilla chips, Fritos Scoops and pork rinds. It’s also great served with sliced veggies like bell peppers, celery and carrots. Basically, anything that can scoop up this delicious dip works!

Storage Instructions

Store leftover dip in an airtight container in the refrigerator for 3–4 days. To reheat, just warm it in the crock pot on low or in the microwave, stirring occasionally. You can also freeze it for up to a month. Just thaw in the refrigerator before reheating.

Ingredients

  • 1 16 oz can refried beans
  • 4 oz cream cheese cut into chunks
  • 1/2 cup sour cream
  • 2 green onions thinly sliced
  • 1 packet taco seasoning
  • 2 cups shredded Mexican 4-cheese blend
  • 1 10 oz can Rotel, entire can (don't drain)

Instructions

  • Spread refried beans on the bottom of the slow cooker.
  • Layer the rest of the ingredients, cream cheese, sour cream, green onions, taco seasoning, cheese and rotel.
  • Cover and cook on low for 1–2 hours, until everything is melted.
  • Stir dip until smooth and turn heat to warm for serving.
