Ingredients

  • 16 ounces cottage cheese
  • 1 packet taco seasoning
  • 30 ounce can refried beans
  • 1 1/2 cups shredded lettuce
  • 1 1/2 cups Mexican blend shredded cheese
  • 2.25 ounce can sliced black olives drained
  • 1 medium diced tomato
  • 2 sliced green onion

Instructions

  • Place cottage cheese and taco seasoning in a blender or food processor and blend until smooth. Set aside.
  • Spread refried beans evenly in an 11×7-inch dish. Top with cottage cheese mixture and layer the rest of the ingredients in this order: lettuce, cheese, black olives, tomato and green onion.
  • Serve immediately with chips, crackers and veggies for dipping.
